Appearance


The cheese acquires a slightly reddish rind through its ripening and care. The cheese dough is buttery yellow and has small holes in isolated cases.

Consistency


The compact dough of the cheese melts slightly crumbly on the palate. After heating the cheese, it becomes supple and melts on the tongue.

Smell and taste

The smell of the cheese is reminiscent of cream and boiled potatoes, the rind exudes malty hints. The milky-creamy aromas of cream and boiled potatoes also dominate in terms of taste, the rind brings notes of dark caramel and malt as well as a hint of ammonia.
