Our crystal cheese is a rarity. This hay milk cheese speciality with 50% fat in dry matter is unique and very spicy in taste. It gets its unmistakable natural rind from maturing for at least 24 months in a natural maturation cellar. During this time, salt crystals form in the smooth cheese dough. It is made from 100% mountain farmer's hay milk.
