Roquefort is a marbled blue cheese. The production is carried out with freshly milked raw sheep's milk (hay milk) from the Lacaune sheep every day and must meet the strict provisions of the certified designation of origin "Appellation d'Origine Protégée" (AOP). Roquefort matures for 3 months in the limestone of the Combalou mountain caves in a unique natural climate. It tastes extremely spicy, spicy and is slightly salty.
